Latkes are pancakes made from potatoes and originate within the Jewish culinary tradition.

Having married into a Jewish family, I have become acquainted with as many latke recipes as I have in-laws but the recipe to follow is the one I go to when it’s my turn to make these delicious and comforting potato pancakes.

Crepe Recipe – French Pancake

Crepes are thin, delicate and diverse pancakes that can be served with either savory or sweet toppings or fillings. My mother-in-law makes the crepes from this recipe and then fills them with mushrooms in a cream sauce, or asparagus with ham and cheese and rolls them up She then lines them up in a baking dish, covers them with cream and grated cheese and then bakes them and serves them for dinner.

She always keeps a few left over for breakfast the next morning served with a Chocolate Hazelnut spread or Dulce de Leche spread on top and then rolled up.

While there are certain foods that come in and out with the seasons, apple pancake recipes are something that can be made regardless of how warm or cold it is outside.

The smell of apples cooking is one of the most comforting odors that can saturate a home. Adults immediately get transported back to their childhood days and kids will do just about anything that mom and dad ask for the right to dig into those fluffy pancakes.
