
Apricot Chicken and Sweet Potato Puree
Fortified boxed infant cereal is certainly not the only food to introduce to baby when considering weaning. Under normal circumstances, from six months onward, baby is able to try a variety of foods, provided they are pureed to a texture they can manage.
Introducing new recipes to baby at an early age will aid in the weaning process as he or she becomes interested in different flavors and textures of food, and less interested in only nursing for mealtime.
The following recipe for apricot chicken and sweet potato puree is an excellent recipe to try out on baby. The chicken and apricots offer great sources of iron and protein and the sweet potatoes beta carotene and a color and texture that really appeals to the infant palate.
Ingredients
- 2 C low sodium chicken stock
- Small piece of ginger, grated finely
- 1/2 small onion, finely diced
- 1 half chicken breast, cleaned of all fat and cut into thin strips
- 4 dried apricots, finely chopped
- 1 sweet potato, scrubbed, peeled and cut into small cubes
Method
Place chicken stock in a medium saucepan. Add ginger and onion and bring to a boil. Reduce heat immediately to a simmer and add chicken, apricots and sweet potato.Allow to simmer, uncovered until the sweet potato is soft and falling apart.
Remove from heat, and cool slightly.
Pour contents of saucepan into a blender and puree to smooth.
Serve to baby warm.
Apricot chicken and sweet potato puree can be kept in the refrigerator for 2 days.
