
Baked Apple Pancakes
While there are certain foods that come in and out with the seasons, apple pancake recipes are something that can be made regardless of how warm or cold it is outside. The smell of apples cooking is one of the most comforting odors that can saturate a home. Adults immediately get transported back to their childhood days and kids will do just about anything that mom and dad ask for the right to dig into those fluffy pancakes.
There are pancake recipes that we use every day and then there are recipes that we use to mark a special day or occasion. Make these apple pancakes and everyone in the house will think it is their birthday or Christmas morning. Top them with some extra cinnamon or even a dollop of ice cream and they go from great to spectacular.
- ½ c evaporated milk
- 2 T granulated sugar
- 3 large eggs (separate)
- 1/3 c all purpose baking mix
- 2 T OJ
- 1/4t ground cinnamon
- 1 Granny Smith Apple, cored, cut into thin slices
- 1 T cinnamon sugar
Oven should be preheated to 375 degrees. Use a 10” skilled that can but put into the oven, coat it with shortening or butter and put into over for about ten minutes.
In a blender, combine baking mix, milk, 1T sugar, OJ, cinnamon and egg yolks. Blend until all lumps are removed. In a separate large mixing bowl, beat egg whites until a soft peak is formed and then gradually add the remaining 1T of sugar. Continue to beat until hard peaks are formed.
Fold blended mixture into egg white mixture.
Remove hot skillet from oven and pour batter into the skillet. Add apples to batter. Keep them about ½ inch apart and make sure that the peeled side of the apples is showing. Keep placing the apples so that they rotate all the way around the dish. Sprinkle cinnamon sugar so that it lightly covers each apple slice.
Return skilled to oven and bake for about 12 minutes. Start checking after 10 minutes to make sure that they are not overcooked.
