Fish Pie

Fishes are the excellent source of omega- 3 fatty acids, which are important to build up our body immune function and these are really missing in most of our regular diets. Fish could be prepared in many ways. Fish pie is really a luxurious recipe that most of us would enjoy them as evening snacks or as side dish. Fish pie has stuffing with fishes and many vegetables and is very much different from the traditional minced pie.

Ingredients:

  • 350g of fish pieces (cod, haddock, Pollock, salmon)
  • 500g potatoes,
  • 250 ml fish stock
  • 250 ml milk
  • 4 tablespoons of butter
  • 2 cups of all purpose or plain flour
  • 1 cup finely chopped fresh parsley
  • 1 cup sliced onion
  • 150g good Cheddar cheese
  • 1 lemon
  • ½ a fresh red chilli
  • 1 cup green peas
  • 250ml of water
  • ¼ of a teaspoon of salt
  • Ground pepper to taste

Preparation time: 45 minutes.

Method:

Peel the potatoes and cut into big pieces. Put water and salt into a saucepan on a medium heat. Put the lid on the saucepan and bring them to boil for about 10 to 15 minutes until the potatoes are soft. Drain them and mash them to make it lump free.

In the meanwhile, when the potatoes are boiling we can make fillings for fish pie.

Heat 2 table spoons of butter in a saucepan over a medium heat. Add the sliced onions and chopped parsley and red chilies. Fry for 5 minutes until those are soft. Now add the fish pieces into it. Fry for 10 minutes till the fishes are tender. Pour milk into the pan and bring to a gentle boil. Keep stirring. Add salt, and pepper powder. Cook for few minutes more in simmering. The fish stuffing are ready now. Take them out from the pan now and add rest of butter into the pan and let it melt first.

Now add the flour and stir well with a wooden spatula. Add the fish stock. Cook for 3 minutes until slightly thickened creamy sauce is formed. Get a baking tray. Spread a thick layer of creamy sauce into the tray and then add a layer of mashed potato .Now put the previously prepared pie stuffing, grated cheese and lemon juice. Then put another layers thickened creamy sauce and mashed potato on the top. We can use a piping bag and large a nozzle for fluffing the edges.

Preheat the oven to 200°C and place the baking tray in the centre position. Bake for 20 minutes till a crispy brown surface will form. Garnish with grated cheese or black pepper.

ADDITIONS & ALTERNATIVES

To make the fish pie recipe more delicious, use smoked or dried fish. That tastes great.
