
Traditional Christmas Cake Recipe
Everyone has recipes that they remember from when they were a child, but none stick in our heads like the ones that we had during the holiday season. Many of the recipes were a little more expensive to make or maybe too time consuming to make when mom and dad had to go to work every day.
Chritsmas Cake Recipe were always a favorite and when mom started baking for the holidays, there was simply nothing like it. This is not your every day cake and some of the ingredients will take some hunting to find, but believe me, the search will be well worth it. The cake should be made about three weeks prior to use.
Ingredients:
- 12 ounces plain flour
- 8 ounces sugar
- 1 T black treacle
- 1 t cinnamon
- 1 t mixed spice
- 4 ounces candied peel
- 4 ounces cherries
- 2 # dried fruit (can be a store bought mix)
- 4 ounces almonds, blanched and chopped
- ½ t salt
- 4 medium eggs
- 4 T cooking sherry
- 1 lemon, finely grated
- 8 ounces butter (margarine can be substituted)
Method
Use sifter to combine all dry ingredients in separate mixing bowl. In another bowl, mix the fruit, cherries, almonds, lemon rind and peel. In a third bowl, combine eggs and sherry. In a fourth bowl, cream the margarine, black treacle and sugar until soft and smooth. Slowly combine flour mixture with egg mixture. When completely combined, slowly add that combination to the creamed margarine mixture. When that is combined, the fruit mixture can be folded in.
Preheat the oven to 300 degrees and then used greaseproof paper to line the sides and bottom of a 9 inch baking pan. Use a double band of brown paper around the outside of the rim of the pan and make sure that it goes above the rim of the pan. Pour batter into pan and back on middle rack of oven for about 1.5 hours. Decrease heat to about 275 and allow to cook for another 2 hours. Remove cake from oven and allow to cool. Place in airtight container and store until ready.
If icing is going to be applied to cake, do so about one week before serving. This is a homemade Christmas cake recipe that will be like nothing anyone has ever tried.
