
Christmas Cake Recipe
There are so many bad cake recipes that are out there for the holidays that we thought we would treat you to one that everyone loves, rum cake. Christmas is a festive time and there is no better way to get the festivities rolling than with great Chritsmas Cake Recipe. This is a recipe that we found years ago in the Internet and have used it every year to everyone’s delight.
Ingredients:
- 1 c sugar
- ½ c soft butter (margarine can be substituted)
- 3 lg eggs
- ½ t baking powder
- ½ t cinnamon
- ½ t nutmeg
- 1 c flour
- 1 c raisins
- 2 c walnuts or pecans (chopped)
- 2 oz rum
- Salt (one pinch)
Method
Preheat the oven to 350 degrees. In a large mixing bowl, combine butter and sugar until completely mixed and then stir in the eggs. Continue to beat until all ingredients are combined. Use sifter to combine baking powder, flour, cinnamon, nutmeg and salt. When combined, gently fold into liquid mixture. When ingredients are fully combined, pour in nuts and stir until they are spread throughout the mixture. Finally, stir in the rum and continue to mix until well blended.
Grease 9” tube pan and then pour mixture into the pan. Place in oven for about 70 minutes and then remove to cool down. That’s all there is to it!
When the rum cake has cooled, it is perfect the way it is or your favorite icing can be used to add a little more flavor. Because we make this at Christmas time each year, we use a cream cheese pumpkin icing that has everyone drooling the moment that they walk through the door. While this recipe can be made anytime and for any occasion, you may just find that it holds a special place in your heart when it is only made during the holiday season.
